I'm loving: Lazy Sunday Afternoons

This week I've been reflecting on how busy life can be and how joyful the act of doing nothing much can be. This afternoon was all about taking it slow:
  • Cheesy scones* with pesto and cups of tea
  • Reading and story telling and togetherness
  • Naps

*Nin's Cheesy Scones
250g self-rasing flour
1/2 tsp salt
1/2 tsp smoked paprika
125g butter
125g grated cheese
1 cup milk

Preheat your oven to 180oC fan forced (or 190oC without fan).  Sift dry ingredients into a bowl.  Grate cold butter in and rub with your fingers until its a coarse crumb.  Add cheese and stir with a fork.  Make a well and add 3/4 of the milk stir with a fork just wetting the flour (don't over mix it).  Add more milk if required - should be a sticky wet dough.  Flour your hands.  Turn out onto a floured baking sheet and gently shape it into a square around 1 inch thick.  Score four lines across and four down with a knife - but don't cut all the way through.  Brush the top with milk and bake for 25 mins.  Serve warm with either butter or we like Pesto and a slice of tomato.  Yum!
